It certainly gets Mr Thermie’s seal of approval! Halve the recipe if you just want to make one jar for the moment …
Pre-heat oven to 200deg
Sterilise a jar or two – fill with water and place in microwave for 5 minutes to boil – careful the water doesn’t explode! – or place in a pan of simmering water – you could even sterilise in the varoma beforehand, although your TM bowl would need to be completely dry before starting the recipe!
Place on a baking sheet and roast in oven for 5-10 minutes / 200 deg until golden:
- 250g unsalted peanuts
- 100g unsalted cashews
- 100g almonds
- 20g pumpkin seeds
Add to TM bowl and grind on speed 9 / 1 minute:
- the roasted nuts
- 2 tsp chopped dates
- 1 tsp sea salt (or to taste)
Scrape down the sides of the bowl, add, then whizz up again on speed 9 until smooth:
- about 15-20g rapeseed oil
- Spoon into your sterilised jars and keep in the fridge
