Peanut Butter 1.4

This is my take on Quirky Jo’s wonderful nut butter!  http://quirkycooking.blogspot.com.au/2010/09/nut-butter.html

It certainly gets Mr Thermie’s seal of approval!  Halve the recipe if you just want to make one jar for the moment …

Pre-heat oven to 200deg
Sterilise a jar or two – fill with water and place in microwave for 5 minutes to boil – careful the water doesn’t explode! – or place in a pan of simmering water – you could even sterilise in the varoma beforehand, although your TM bowl would need to be completely dry before starting the recipe!

Place on a baking sheet and roast in oven for 5-10 minutes / 200 deg until golden:

  • 250g unsalted peanuts
  • 100g unsalted cashews
  • 100g almonds
  • 20g pumpkin seeds

Add to TM bowl and grind on speed 9 / 1 minute:

  • the roasted nuts
  • 2 tsp chopped dates
  • 1 tsp sea salt (or to taste)

Peanut Butter 1

Scrape down the sides of the bowl, add, then whizz up again on speed 9 until smooth:

  • about 15-20g rapeseed oil

Peanut Butter 2

  • Spoon into your sterilised jars and keep in the fridge
