Gluten Free, Refined Sugar Free ‘Anzac’ Biccis

Here’s my take on some healthy Anzac Biccies … you can also make them grain-free and dairy free by making a few substitutions:

Healthy ‘Anzac’ Biccis I made about 20 … … and then there was 1 …

Weigh into TM bowl and whizz up on speed 9 / 10 seconds:
75-80g chopped, dried dates

Add and whizz up on speed 9 / 10 seconds:
80g almonds

Add and mix in speed 3 / reverse / 10 secs, then set aside:
1 tsp cinnamon
120g organic rice flakes (or use buckwheat/quinoa flakes for GRAIN-FREE)
80g dessicated coconut, organic/sulphur free, if possible

Add to bowl and heat 2 mins / 60deg / speed 2:
70g (home-made) butter (or substitute for coconut oil for DAIRY FREE)
35-40g orange or apple juice concentrate (organic)

Add and mix 5 seconds / speed 3:
1/2 tsp bicarb of soda
1 tbs water

Add and set dial to closed lid position and mix 30-35 seconds / interval speed:
the dry ingredients  (date, almond etc mixture)

The dough should be quite sticky – add a little water if not.

Shape small balls of the dough and pop onto a baking sheet lined with baking paper or on a silicone mat. Flatten the balls down with a fork to form a cookie shape.

Bake for 20 minutes at 160 deg or 150 ff

Take about 35 minutes from first blitzing the dates to pulling the biccis out of the oven … and doing dishes, vacuuming and sending a message or two in between!
