It’s that time of year where the kids arrive home from school on a warm Summer’s day, in need of some light refreshment. This is perfect: just low GI berries, yoghurt and a little sweetener to taste. I always try and keep some home-made icy poles ‘in stock’ and this recipe couldn’t be any easier for that purpose:
Blend on speed 9 / 1 minute, then pour into icy pole moulds and freeze overnight or for several hours:
- 150g any old mixed berries, fresh or frozen
- 150g natural dairy yoghurt or coconut yoghurt – coconut cream would also work, although I haven’t tried it yet.
- 1-2 tbs unrefined cane sugar / xylitol / brown rice syrup or preferred sweetener, to taste
Once frozen, run the moulds under the tap, extract the icy pole and let everyone enjoy!
Tips:
These quantities fit perfectly into the batch of 4 moulds that I have – double up to make more!
